Alaska is always on the top of everyone's bucket list but few people go beyond dreaming about it - whether it be because they don't think they have the budget or feel it is so remote.  Alaska is so immense as a state with natural wonders (i.e. glaciers, mountains, rivers) - you won't see it the same way twice.  There are so many ways to experience it as well - by sea and by land.  Below are some suggested itineraries but by no means is the end.  Just keep in mind that Alaska has a short season if you want to visit when it is not "cold", but that is when the northern lights are at their most spectacular.  Call us if you want to get a custom quote.  There is sure to be a trip for any budget.

Lots to see and do around Anchorage.  Are you a foodie or into hiking?  Seeing glaciers is no problem from the land or the air. And you don't have to scale the highest mountain in the US, Mt Denali but it is tricky to see it with its own generated weather.

The cruise lines are not slackers in the dessert department so you might get a chance to sample some of the recipes provided below:

Chocolate Lava Cake (courtesy of Carnival)

Ingredients:

  • 6 ounces of dark chocolate
  • 6 ounces (¾ cup) of butter
  • 4 eggs
  • 3 ounces (2 ¼ tablespoons) of sugar
  • 2 ounces (½ cup) of flour
  1. Preheat the oven to 390°F.
  2. Melt the chocolate and butter together in the microwave or on the stove top. Don't overheat!
  3. Mix eggs and sugar together, whisking them for a few minutes, then add in the flour.
  4. Add the egg mix to the melted chocolate mix and combine them.
  5. Pour the mix into a greased mold/muffin tin/small bowl.
  6. Bake directly in the oven at 390°F for 14 minutes.

Note; If you’re baking them in individual ramekins, you can line them up on a baking sheet, placing them in rows a couple of inches apart to bake them all together. We found that putting a little water on the bottom of the sheet helped to keep the cake moist and the center melted. If adding the water, baking time should be extended to 18 minutes.

Serve with side of vanilla ice cream and fresh berries.

Almond Cake (courtesy of Viking)

Ingredients:

  • 8 Tbsp unsalted butter, room temperature
  • ¾ C  sugar
  • 1 C almond paste
  • 3 lg eggs
  • ⅓ tsp baking powder
  • Pinch of salt
  • ¼ tsp almond extract
  • 1 Tbsp kirsch or Grand Marnier
  • ¼ C cake flour
  1. Preheat oven to 350°F (176°C).
  2. Butter and flour an 8-inch springform pan well, or use a shaped pan for a fancier cake.
  3. Beat together butter and sugar in a large bowl until light and fluffy.
  4. Add almond paste; beat well.
  5. Add eggs one at a time, beating well between additions.
  6. Add baking powder, salt, almond extract and liqueur; stir to combine.
  7. With a spatula, gently fold in flour, making sure not to overmix.
  8. Pour into prepared pan. Bake for 35–45 minutes or until golden brown and toothpick inserted into center comes out clean; make sure you do not underbake. Cool slightly on a cooling rack. Note: The small amount of flour is correct; this is a tender, delicate cake that gets its lift from the eggs.

Dust with confectioners’ sugar and garnish with fresh berries
